Auguste Escoffier Offers New Home Cook Classes in the New Year

The holidays may have come to a close, but that doesn’t mean dinner parties and entertaining have to end. Auguste Escoffier School of Culinary Arts in Boulder, CO keeps a packed calendar of Home Cook Classes to make anyone feel like a pro while wearing an apron.

Learn how to make authentic pasta from scratch in 1/21’s “Pasta, Pasta!” workshop where you’ll create fresh egg pasta; spaetzle; linguini with bread crumbs, mint and tomato sauce; orecchiette with kale and sausage and tortellini with a butter pistachio sauce. You’ll never be able to return to boxed pasta after this course.

For those trying to cut back on their carb intake, try Wednesday January 22nd’s “Cast-Iron Cookery” workshop where you’ll learn different techniques to bake, fry, roast, sear and sauté. Featured dishes include cornbread; pan-seared flatiron steak with lemon-herb compound butter; shaved Brussels sprouts with pancetta & radicchio and sweet potatoes with chipotle ketchup. Kick off your weekend on Friday January 24th with the monthly running “Girls Night Out” workshop. This week’s theme is Mexican with homemade flour tortillas; roasted poblano guacamole; marinated skirt steak fajitas; cilantro lime rice and of course, sopaipillas with honey butter.
