Asparagus is a versatile vegetable that is full of vitamins and nutrition. This is an easy to make light recipe that features asparagus.
1 pie crust, either home made or store bought
1 pound asparagus, cleaned
1 onion, sliced thinly
1 tbsp vegetable oil
8 oz heavy cream
4 ounces grated Parmesan
4 ounces grated Gruyere
salt and freshly ground pepper to taste
Line a pie or quiche plate with pie crust.
Bake pie crust at 350 degrees for 10 - 12 minutes. It should be lightly golden.
Steam asparagus until tender.
Dry asparagus thoroughly.
Saute onion in vegetable oil until limp.
Combine eggs, cream and cheeses in bowl.
Place onion on top of pie crust.
Pour filling on top of onion.
Lay asparagus spears on top of filling.
Bake for 25 minutes at 350 degrees, until filling is set.
Cool a few minutes before serving.
