Asian fusion sweet and spicy chicken wings for Super Bowl game day eating

The Giants-Patriots game is playing soon in our local TV rooms, and it’s time to start planning our Super Bowl party foods. Asian Fusion Sweet and Spicy Chicken Wings are an ideal finger food choice:  a little bit of hot, a little bit of sweet, and a whole mouthful of flavor will greet your cheering football fans.

We’ve been told Super Bowl Sunday is second behind Thanksgiving for the average number of calories consumed in one day. While we certainly don’t encourage over-eating, a few of these succulent wings aren’t going to put anyone over the top on their daily count.

Asian Fusion Sweet and Spicy Chicken Wings

(Note:  if “hot” wings are not desired, eliminate the crushed red chili pepper flakes.)

Ingredients:

  • 3/4 cup hoisin sauce
  • 1/4 cup honey
  • 1/2 cup rice wine vinegar
  • 1/4 cup good balsamic vinegar
  • 1 teaspoon tomato paste
  • 3 clove garlic, finely chopped
  • 2-3 teaspoons crushed red chili pepper flakes (depending on desired degree of heat)
  • 2 teaspoons Chinese five-spice powder
  • 1 large sprig fresh rosemary, leaves stripped from stalk and finely chopped
  • 1/2 teaspoon dried or 1 teaspoon finely chopped fresh tarragon
  • 1/4 teaspoon dried or 1/2 teaspoon finely chopped fresh thyme
  • peanut oil
  • 3 pounds chicken wings, drummettes and wings separated (freeze wing tips for stock)
  • 1/4 cup fresh parsley, finely chopped
  • Kosher salt to taste

Directions:

  1. In a medium bowl, whisk together hoisin sauce, honey, rice wine vinegar, balsamic vinegar, tomato paste, garlic, red chili pepper flakes, five-spice powder, rosemary, tarragon, and thyme; set aside.
  2. In a 4-quart deep saucepan, heat 3" of peanut oil over medium heat until a deep-fry thermometer registers 360°.
  3. Prepare a place to drain the cooked wings by placing a double layer of paper towels on counter next to stove.  (Note:  we like to place a paper grocery sack under the towels, for easier clean-up.)
  4. Working in batches, fry chicken in hot oil until the skin turns bubbly and golden brown and the meat is cooked through, about 10 minutes.
  5. With a slotted spoon, remove chicken pieces from oil and place on paper towels to drain.
  6. Then put the cooked chicken in the bowl with sauce; tossing until the pieces are fully coated.
  7. Transfer the chicken to a platter.
  8. Spoon some of the remaining sauce over the top; reserve the rest for dipping, if desired.

Makes 6-8 servings

You can purchase hoisin sauce and rice wine vinegar in the Asian section of your local Lucky Supermarket or in Trader Joe’s.
