The Jacques Lassaigne Rosé de Montgueux Extra Brut NV is a 80% Chardonnay, 20% Pinot Noir sparkling rosé, full of mineral fruit tinged with strawberry, peach and raspberry notes, accented with smoke and spice, very elegant and yummy, definitely my favorite of the tasting. This is a special bottling, with it’s zesty mineral and floral notes, it’s great as an aperitif or with food. Heirloom LA served a crispy pork belly risotto, rich in deep flavor and fat, with creamy saffron coating the rice. It was an epiphany, the rosé Champagne cutting through the fat of the dish, with good body and great flavor. This is a special occasion sparkling wine, one that you will crave every day if the budget allows.
The fourth and final Champagne, the Nathalie Falmet Brut Rouvres NV is a full-bodied, organic, 100% Pinot Noir bubbly. Floral, aromatic, with sweet smoke and spice notes on the nose, it charms with bright citrus, green apple, quince, biscuit, vanilla, and candied orange peel. Heirloom LA’s Matt Poley whipped up a sabayon that was excellent and amazing, accented with persimmons and creme fraiche. The warm, creamy, luscious egg custard, silky and smooth, was accented by the Falmet Champagne. It's crafted by one of the few women in Champagne that is both grower and winemaker.
