Around the world in New Years Eve cocktails

Toast to the New Year in style with one (or several) of these six international cocktails. Pick your pleasure and pucker up.   

Pimms Royal Cup – An elegant English refresher
The Pimms Cup, the official beverage at Wimbledon, is a refreshing beverage mixing Pimms, a spicy citrus infused gin, with 7-up, lemon and cucumber. A little twist with Champagne results in the Pimms Royal Cup suitable for any special occasion. All that's needed to make this tasty beverage is Pimm's No. 1 and Champagne.
Add 1 1/2 ounces of Pimm's No.1 to a Champagne flute and top it off with Champagne.

Kir Royal
– A classic French twist on the Champagne Cocktail
1 part cassis, 5 part champagne.
Pour the casis in the bottom of a champagne flute and gently pour 5 times that amount of your favorite champagne on top. What results is a flamboyant red cocktail welcome at any gathering. Garnish with a strawberry or black berry on the side of the flute for extra flair.

Sgroppino - Leave it to Giadda de Laurentiis, host of Everyday Italian on the Food Network, to present this enticing Italian cocktail for two.
1 cup chilled Prosecco (Italian sparkling white wine)
2 tablespoons chilled vodka
1/3 cup frozen lemon sorbet
1/4 teaspoon chopped fresh mint leaves
Pour the Prosecco and vodka into 2 Champagne flutes, diving equally. Spoon a scoop of sorbet into each flute. Sprinkle with mint and serve immediately

Beijing Bellini - Try this recipe from Andrew Krauss of New York City’s China 1 Antique Lounge.  It's  good luck with a nutty flavor.
3 parts Champagne or Dry Italian Prosecco
1 part Lychee wine or Lychee Liquor (Soho brand)
1 Lychee nut dropped to bottom of glass
Serve in a tall champagne glass

Jameson Irish Apple - A super simple sour apple smoother.
2 oz Apple Pucker Schnapps
2 oz Cranberry Juice
2 oz Jameson Irish Whiskey
Serve over ice

Coquito – A Puerto Rican holiday favorite with coconut flair. This beverage is a super sweet end to the evening. Very easy to prepare ahead.
1 can (13.5 oz) coconut milk
1 can (13.5oz) coconut cream
1 can (12oz) evaporated milk
1 bottle (10 oz) white rum (Bacardi recommended
½ tsp cinnamon
Mix the ingredients in the blender. When finished put in a large glass decanter. Refrigerate and serve cold.
