- 12 medium-sized apples
- 1/3 cup brown sugar
- 1/3 cup white sugar
- 1 tsp. cinnamon
- 1 tsp. vanilla
- ¾ cup water
- 2 tablespoons butter

Peel and core the apples, and cut them in large chunks. Put them in a large pot. Add the brown sugar, white sugar, cinnamon and vanilla. Pour the water over the mixture. Cover and bring to a boil. Lower the heat and let the apples simmer for 45 minutes to an hour – or until the apples are very tender when tested with a fork.
Remove the pan from the heat. Using a potato masher, mash the apples until the applesauce is the consistency desired (some people like it very smooth and some like it with chunks of apple). Add the butter and stir it into the apples until it is melted. Serve warm or let it cool to room temperature. Refrigerate or freeze leftovers.
