As the weather becomes cooler, I like to start thinking about doing more indoor activities. When it's cold and rainy outside, that's my favorite day to bake something. It's a comfort to know you're in a cozy, warm kitchen while the weather's cold and uncomfortable. And, when you're baking something with the scents of cinnamon and cloves, it gives you more of a reason to be indoors!
I have for you a recipe that's perfect for the fall season, in that it uses applesauce, spices and raisins. "Applesauce Pound Cake" is chock full of flavor from the warm spices it has, along with the raisins and moist flavor the applesauce provides. It's just the cake for fall! If you happen to be participating in a bake sale for a school, church or organization this fall, this would be perfect to take.
There's one interesting thing about this cake: there are NO EGGS in it! When I first saw this recipe, I felt that there had to be a mistake with no eggs being mentioned, especially for a pound cake recipe. However, I decided to try it and see what would happen. Turned out that it was correct! Though no eggs are used in this recipe, it still produced a tall, high and flavorful cake. So, if you want to bake a pound cake and don't have the correct number of eggs on hand, this recipe is for you!
This cake is mixed much like the typical pound cakes are. You cream butter and sugar, which is the real trick to a successful pound cake. Instead of adding eggs, you add the applesauce. The raisins are plumped in hot water, drained and added to the cake batter, along with flour, baking soda, cinnamon and cloves. The cake bakes for about an hour, which of course depends upon your oven. My oven bakes fast, so I find that it doesn't take as long for a cake to bake as what the recipe calls for.

When the weather turns cool and damp, turn on the oven, warm up the kitchen and perfume the house with this pound cake that's fall-perfect !
APPLESAUCE POUND CAKE
- 1 pkg. (15 oz.) raisins
- boiling water to cover
- 2 sticks butter, softened
- 2 cups sugar
- 2 cups applesauce
- 4 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon baking soda
Preheat oven to 350 degrees. Grease and flour a 10-inch tube pan and set aside. Place raisins in a medium bowl and pour enough boiling water to cover them. Let them stand while making the cake. Cream together the butter and sugar until fluffy. Add the applesauce and beat well. Combine the dry ingredients and add gradually to the applesauce mixture, mixing until smooth each time. Drain the raisins well and fold into the batter. Turn into prepared pan. Bake for about 1 hour, or until cake tests done. Let cool in pan 15 minutes before removing to a serving plate.
