A great snack cake to make for those last minute desserts, after school snacks, and to put in lunch boxes.
Apple and Cinnamon Snack Cake
1 stick margarine, room temperature
3/4 cup brown sugar, DIY Brown Sugar
1 cup unbleached King Arthur All Purpose Flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 to 3/4 teaspoon ground cinnamon
2 eggs, beaten
1 1/2 cups apples, shredded
1/2 cup chopped nuts
Preheat oven to 350 degrees F. Grease 8x8 pan. Cream margarine and brown sugar until light and fluffy. Beat in eggs. Add dry ingredients and beat for 2 minutes or until mixed well. Stir in apples and nuts, if using. Spread into greased pan and cook in preheated oven for 25 to 30 minutes or until a tooth pick inserted in the middle comes out clean. Sprinkle with cinnamon sugar. Enjoy!
