Easy appetizer with chicken is ready in 15 minutes

These little appetizers are so easy to make and taste so good – to top it all off, they look so beautiful, too! Everyone will be amazed that you didn’t work for hours making them. That’s what makes this recipe absolutely perfect! Chicken and the other ingredients are simply put into a blender and poured into mini phyllo cups.

Phyllo cups can be purchased in nearly any grocery store. Sold in the freezer section of most larger grocery stores, they are perfect for so many appetizer fillings. This recipe calls for the “mini” version.

Chicken Curry Appetizer Recipe

Ingredients for Chicken Curry Appetizers (makes 15 cups):

  • ¼ cup vanilla Greek yogurt
  • ¼ tsp. curry powder
  • ¼ tsp. lemon juice
  • 1 cup chopped chicken
  • 1 tablespoon golden raisins
  • Salt/Pepper to taste
  • Frozen mini phyllo cups

Directions for making Chicken Curry Appetizers:

Preheat the oven to 400 degrees.

In the container of a blender, put the yogurt, curry powder, lemon juice, chicken and raisins. Blend until smooth.

Pour the ingredients evenly among 15 phyllo mini cups (or, for a nicer presentation, put the filling in a pastry bag and pipe it into the phyllo cups).

Put the filled cups on a baking sheet and bake until browned – about 12 minutes. Serve warm.

Spinach and Feta Cheese Cups

Ingredients for Spinach and Feta Cups (makes 15):

  • 1 egg
  • 1/8 tsp. oregano
  • 1/8 tsp. garlic powder
  • 1/8 tsp. pepper
  • 1 cup baby spinach, finely chopped
  • 3 tablespoons feta cheese, crumbled
  • Frozen mini phyllo cups

Directions for making Spinach and Feta Cups:

Preheat the oven to 400 degrees.

In a small bowl, stir together the egg, oregano, garlic powder and pepper. Add the chopped spinach and feta cheese.

Evenly fill the phyllo cups with the spinach and feta mixture. Place on an ungreased baking sheet. Baked until browned and slightly puffed – about 12 minutes. Serve warm.
