Anita's Tried and True Recipes Website (see slide show below)
I have been following this website for years, http://www.anitasrecipes.com/ as I receive email updates as they come out. I contacted Anita and asked her if I could write an article about her and her website:
Anita’s recipe site started back in 1997 before the Internet had so many recipe
choices available. Anita and her husband were concerned about their health since their families had high cholesterol, blood pressure, etc.
Anita Matejka lives in Texas. She manages two non-profit web sites, which her husband writes the code for. Anita tests them to make sure there are no bugs. Looking after both sites keep her busy! She and her husband have been married for 17 years and have two rescue dogs they adore. The couple is originally from Ohio but will have lived in Texas for almost 15 years in December.
Do you have any culinary training?
No I have no professional training. I have learned many techniques from my
mother, grandmother, mother-in-law, and a friend of over 20 years. I also have picked up tips from watching cooking shows and from the hundreds of cookbooks I own.
How do you come up with ALL of these great recipes?
My main source for recipes is from older cookbooks but I do get some from
the Internet. I change the ingredients to lower fat, lower salt, and no salt
options for health reasons. Due to copyright laws, I also change the wording
in each recipe from the original. Although, I always give credit to the original source if there is one available.
What are some special traditions and recipes you do and make for Christmas?
Christmas is the one time of year where we splurge and make recipes that aren't fat-free or lower in fat!
Each year we make a variety of cookies and candies including: sugar cookies, Kolachky, marguerites, ribbon cookies, peanut butter cups, chocolate bon bons, and peanut clusters.
The Kolachky are a small Polish pastry that is a tradition in my husband's family. His mom taught us how to make them along with the peanut butter cups and peanut clusters.
The friend I mentioned above introduced me to making sugar cookies a long time ago since it was a tradition in her family. It has also become a tradition in mine. We make and decorate sugar cookies for different seasons like Christmas, Easter, and Halloween and also make specialty cookies like dog bones, butterflies, and zebras.
