Searching around Pinterest always brings baking inspiration! So it wasn't any surprise when I came across Inside BruCrew Life's Oreo Peppermint Crunch Cookies, I had to try them. Only while making the cookies, I came across a little problem - I didn't have all of the ingredients. So the Andes mint cake mix chocolate chip cookies were inspired by the Oreo Peppermint Crunch Cookies.

Using Betty Crocker's cake mix cookie recipe, I added chocolate chips and Andes baking mints to create the cookies. You could use a chocolate cake mix if you want to make chocolate chocolate cookies. This is a quick to make easy recipe you can make with your kids during the week or for a weekend project. With Valentine's Day coming up, you can use a strawberry cake mix for pink cookies or add green food coloring for St. Patty's Day. It is a versatile recipe that will be eaten quickly.

Ingredients

1 box white cake mix
2 eggs
1/2 cup butter
2 tbs vegetable oil
1 tsp vanilla extract
6 oz. chocolate chips
6 oz Andes baking mints

1. Preheat the oven to 350 degrees F.
2. In a large mixing bowl, cream the butter.
3. Mix in the vanilla extract, vegetable oil, and eggs.
4. Stir in the cake mix.
5. Stir in the chocolate chip cookies and Andes baking mints.
6. Spoon the cookie batter onto cookie sheets. Bake at 350 degrees for about 8-12 minutes.
7. Let cool.

Serving: about 24 cookies
Prep Time: about 15 minutes
Bake Time: 8-12 minutes
