I have been gone for a bit but I would like to announce that I will be posting again some amazingly great food ideas on a budget. I will be trying to stay within a $50 dollar a week recipe ideas. I am sorry that I took off 2012, but life happens and we stand back up and keep going.
And to start things off right, my recipe today is more than one.
A Great cheap way to do dinner is brinner! Breakfast for dinner!
Pancakes and waffles are a great, cheap way to feed people and are available in simple, cheap mixes. By having a few topping to mix things up, likes Chocolate chips, granola, and fresh fruits you have a good start to making whatever type of waffle or pancake your mind can imagine. Once you pour your batter in the pan you can add the toppings. It is also a great way to make cheaper pancake mix taste a lot better, especially when you are pinching pennies.
Hash brown casserole is another delicious and low cost dish to feed your guests.
Ingredients
· 2 lbs. frozen hash browns, thawed.(about two bags)
· ½ cup butter
· 1 can cream of chicken soup
· 1 pint sour cream
· 2 cups grated cheddar cheese
· 1 teaspoon salt
· 1\2 teaspoons pepper
Mix all the ingredients together and pour into a 11x13 sprayed with Pam or something of the like. Bake for 45 minute at 350 degrees. It is a nice warm cheesy side dish. It is very filling though.
Breakfast meats like bacon can pricey, but I think they’re worth it because it so tasty. Sausage and ham can be cheaper options, but it really all depends on what you have locally available. Also, most breakfast meats freeze well so you can keep some extra on hand in the freezer.
