Barbecue and grilling is favorite way of cooking all over the world. In Ireland, there is a World Cup Barbecue Championship. Irish-Wilmingtonians love to barbecue and grill. We are well versed in a wide range of preserving techniques and have a long tradition of folk cooking with the grill in mind.
So what to prepare when St. Patrick's Day rolls around and you love to grill? Try an Irish Grilled Flank steak and Irish Potato Salad.
Irish Grilled Flank Steak
This grilled flank steak recipe is a great make ahead meal item. You can marinade it overnight and have it ready for dinner the next day.
1 flank steak, about 2 pounds
1/2 cup applesauce, unsweetened
1/3 cup soy sauce
3 cloves garlic, minced
2 tablespoons cider vinegar
1/4 teaspoon black pepper
1. Place flank steak in a re-sealable plastic bag. Combine remaining ingredients and pour over steak. Seal bag and refrigerate overnight. Preheat grill for medium-high heat. Remove steaks from bag making sure to reserve marinade. Place marinade in a small saucepan and bring to a boil, reduce heat and allow simmering for 6-8 minutes. Place flank steaks on a lightly oiled grill grate and cook for 6 minutes per side. Remove from heat, drizzle with sauce, and serve.
Irish Potato Salad
This is a simple and delicious creamy-style potato salad that can be made in about 30 minutes.
6 white potatoes
1 cup sour cream
1 cup mayonnaise
1 tablespoon green onion, minced
1 clove garlic, minced
3 strips bacon, cooked and crumbled
salt and pepper to taste
1. Place peeled and sliced potatoes in a large pot and boil for 20 minutes, or until tender. While potatoes are boiling, cook bacon until crisp. Allow to cool slightly before crumbling. When potatoes are cooked, drain and let sit for 5-10 minutes to cool. Once cooled, add in mayonnaise, sour cream, garlic, green onion, bacon, salt, and pepper.
