An Hour Away: Kathy’s Deli celebrates 8 years of salads, sandwiches, smiles

When Kathy and Glenn Pugh opened Kathy’s Deli, Shippensburg, in November 2002, they envisioned a hometown full-service deli serving quality homemade salads, freshly-sliced meats and cheeses, party platters to order, and perhaps a well-made sandwich or two.

What they did not expect was that they would also become one of the hottest lunch spots in Shippensburg.

Voted “Best Lunch,” “Best Deli,” “Best Soup,” and “Best Salad” in 2009, Kathy’s Deli has raised the bar on lunchtime expectations in food, service, and variety.

Custom-made sandwiches, wraps, and subs were among the deli’s original menu, made with Terranetti’s locally-baked Italian breads and layered with freshly-cut deli meats, cheese, and a choice of over 20 vegetables and condiments.

For a heartier, warmer sandwich, Kathy's offers eight grilled pananis, built on ciabatta bread and grilled to order. These sandwiches such as “ultimate grilled cheese” (four cheese with blue cheese dressing, bacon, and tomatoes) or “grilled chicken pesto” (grilled chicken topped with onions, roasted red peppers, black olives, provolone cheese, parmesan cheese, and pesto sauce) are elegant spins on homemade favorites.

Kathy’s Deli salad line also is customizable with mix-and-match “Create Your Own Salad” options or any six “Signature Salads.” If you are not looking for sandwiches or soups, dig into the hot meal special, which is just as homemade as your grandmother's! Options range from roast turkey and stuffing to oven-fried chicken, with weekly hot meal menus are available online.

Complete your meal with any of Kathy’s daily soup specials or homemade, rotating salads, available by the pound. Do not forget freshly-baked cookies, decadent desserts, coffee, or tea.

During lunch hour, it’s easy to see why Kathy’s Deli was named “Best” in four Shippensburg categories: lines of customers wind from the door to the ordering counter where a flurry of deli employees take orders, prepare sandwiches, or dish up mounds of homemade potato, pasta, and macaroni salad.

“Roast beef on rye for Cara?” an employee calls with a smile, handing over a freshly-prepared sandwich.

“Southwestern ranch salad for Marty?” announces another.

The personality of Kathy’s Deli may just be the store's secret ingrediant.
