An ambitious wine that lives up to expectations: Girard Cabernet Sauvignon

Girard is an ambitious, artisan winery that expresses the character of premier vineyard locations
through high-quality, handcrafted, and stylistically diverse wines that match grape varieties
with their ideal terroirs. Initially founded in 1975 by Steve Girard, the winery was acquired in
2000 by vintner Pat Roney where they continue to make wines that reflect the climate of Napa.

Girard Cabernet Sauvignon, Napa County is typical of the wines from this winery. Girard’s winemaker, Glenn Hugo, crafted this final blend of 14% Merlot, 8.5% Petit Verdot, 1% Cabernet Franc, 0.5% Malbec and 76% Cabernet Sauvignon from grapes coming from multiple Cabernet Sauvignon lots across Napa County, giving him the opportunity to produce a wine with a broad palate of characteristics and flavors.

Basically, Girard Cabernet Sauvignon is a well-rounded, balanced, elegant and approachable wine. With its beautifully-developed, intensely vibrant flavor, French oak can’t help but star in this deliciousness.

Enticing aromatics of blackberry and cassis are followed by hints of espresso, vanilla and toasty oak. Toffee, leather, cocoa pipe tobacco, and Bing cherry make an appearance before teasing the nose with soft and elegant baking spices.

The softness continues in this medium-bodied Napa Cabernet Sauvignon with flavor expressions of dark fruit infused with toasted hazelnuts and plush tannins that whisper quietly among the mouth-filling flavors of freshly-brewed coffee, sweet vanilla bean, raspberry, cassis and pepper.

The rich, buttery blackberry pie flavors don’t get lost, however. Vanilla and spice simply accent the more robust dark fruit aromas, blending with mocha, sandalwood, and cigar box into a homogeneous yet layered toasty oak package.

Highly tannic underneath all the fruit, the wine has some time ahead of it, a hallmark of the quality of this Napa Valley producer. With finely-integrated oak and well-proportioned tannins, this stunning food-friendly Cabernet leads to a long, structured finish highlighting satisfying flavors of graham cracker and plum. As the wine decants, the flavors of sweet raspberry, mocha, and vanilla become more prominent and the lingering finish softens with a hint of sweet mint to leave you desiring
more.

This beautifully-developed, intensely vibrant Cabernet can be enjoyed with a variety of dishes year-round especially when paired alongside a beautiful filet or hearty chili.

You can find this wine at Circus Wines/Spirits Unlimited, 835 State Highway 35, Middletown, NJ 07748.
