Amazing’s Amazing Chocolate Cake

6 eggs, separated – room temperature

1/2 cup orange juice

1 teaspoon vanilla extract

1-1/2 cups sugar, divided

1 cup all-purpose flour

1/3 cup baking cocoa

1/2 teaspoon cream of tartar

In a large bowl, beat egg yolks until slightly thickened and lemon-colored. Stir in orange juice and vanilla. Gradually beat in 1 cup sugar on low speed, about 2 tablespoons at a time. Beat on high until mixture thickens and nearly doubles in volume. Combine the flour and cocoa. Slowly fold the flour mixture into the yolk mixture.

In a second large bowl and with clean beaters, beat egg whites and cream of tartar in medium speed until soft peaks form. Gradually beat in remaining sugar, about 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Fold a fourth of the egg whites into the yolk mixture; fold in remaining whites. Pour into two baking pans. Bake at 325 for 55-60 minutes

Chocolate filling

1 3/4 whipping cream

1 cup melted dark chocolate

3 heaping tablespoons peanut butter

Whisk the whipping cream until it is thick. Mix whipped cream, melted dark chocolate and peanut butter to make chocolate filling.

Chocolate Ganache

½ cup fresh milk

1/3 cup heavy cream

1/3 cup butter

12 ounces dark chocolate chips

Pour the fresh milk and heavy cream into a pan together, add the butter and heat until it is about to boil. Take it off the heat and pour it over the chocolate. Stir until the chocolate has melted and the mixture is smooth.

Sandwichtwo layers of chocolate cake together with a layer of chocolate filling and just a little of the ganache. Pour the rest of the ganache over the cake letting it fall down the sides and smoothing to cover with a palette knife. Decorate with grated chocolate or a pile of chocolate curls, top with a dollop of whipped cream topped with red cherries.
