2 cans coconut milk, full fat
2 tsp. vanilla
2/3 cup maple syrup
1 ½ tsp. arrowroot powder
½ cup almonds, chopped and roasted
1 cup almond milk
¾ cup chocolate, chopped
¾ cup almond meal
Prepare your ice cream machine according to package instructions. In a saucepan, whisk together the coconut milk, almond milk, vanilla, and syrup. In a bowl, whisk together the arrowroot powder and several spoonfuls of the coconut milk mixture. Add this back into the saucepan and bring to a boil.
Let chill for at least 30 minutes (up to a few hours). Stir in the almonds to the chilled milk mixture. As the ice cream thickens in the machine, add in the almond meal and chocolate. Once the ice cream is done in the machine, chill in the freezer for at least 30 minutes before eating.
