Alfredo sauce recipe: Easy and delicious white sauce for pasta

The secret is in the sauce – and with pasta, this is always true. The best pasta sauces are what we remember, and what we want again and again. Alfredo sauce is one of the best pasta sauces ever. It’s creamy, cheesy goodness is wonderful on any type of pasta. Here is a version that can be ready in minutes. This gives you all of the taste of alfredo without all of the hassle and spares you just a few of the calories.

Alfredo sauce is traditionally served on fettuccini, a long ribbon-shaped pasta. You can serve it on any pasta, however. Penne or rigatoni are both types of pasta with ridges – perfect for holding sauce to the pasta. Cavatappi is a cork-screw shaped pasta which holds sauce well, too. There are reasons for so many shapes and sizes.

Easy Alfredo Sauce Recipe

Ingredients for Easy Alfredo Sauce:

  • ½ cup butter
  • 2 tablespoons flour
  • 2 cups milk (you can use cream, skim milk, or anything in between)
  • 1 ½ cups parmesan, grated or shredded (plus extra for over the pasta before serving)
  • Salt/pepper
  • Dash of nutmeg
  • 1 box pasta of your choice, cooked 2 minutes less than package directions

Directions for making Easy Alfredo Sauce:

Melt the butter in a large skillet or pan. Add the flour and whisk for at least 2 minutes (to get rid of the flour flavor). Add the milk and whisk until it thickens. Remove from heat -- add the parmesan, salt, pepper, and just a dash of nutmeg. Mix into some pasta. Serve topped with shredded parmesan.

(Hint: Cook pasta 2 minutes less than package directions. Drain it, then add it to the sauce. Over medium heat, cook the pasta in the sauce - stirring constantly – for about 2 minutes. This will allow the pasta to absorb some of the sauce. This is a great hint for any pasta sauce.)
