If you're a woman who's hesitated to try the Paleo diet because you can't handle carbohydrate deprivation, there's a new version of the caveman diet that solves that problem. We talked with Esther about how her plan differs from traditional paleolithic diets. She says that it's unique in that "it's "the first Paleo book that is specifically target women's bodies, hormones and lifestyle. Each woman has a unique tolerance to carbs, and this tolerance can fluctuate throughout her monthly cycle. So I created a Paleo Chic template for women to follow, and I help each woman to custom-tailor this template to her own unique needs."
After working as a holistic nutritionist in Manhattan for about 20 years, Esther has seen fad diets soar...and sink. As a result, she developed her version of the Paleo diet to provide women with a plan that would take off the pounds and keep them off for life.
"My clients are repeatedly astounded by the results they get when they eat high-protein, low-carb Paleo Chic diet our bodies naturally crave. They're amazed at the long-term, stunning results they get in such a short amount of time," she said.

Zucchini Pasta with Meat Sauce
1 tablespoon extra virgin olive oil
1 carrot, finely grated
1 celery stalk, finely grated
1 small onion, finely grated
2 garlic cloves, minced
1 pound meatloaf mix with ground beef, veal, and pork
1 28-ounce can tomato puree
½ teaspoon sea salt
1 bunch fresh basil
Heat olive oil in a large heavy-bottomed pot over medium heat. Add carrot, celery, and onion; cover and steam, stirring every few minutes, until onions are translucent and all liquid has evaporated. Add garlic and cook another minute. Add meat and cook until browned. Add the tomato puree, salt, and basil. Cover and reduce heat to low; simmer for 30 minutes.
2 large zucchinis, peeled and ends trimmed
Peel zucchini, and slice off the ends. Place entire zucchini in spiralizer set to the smallest blade. (Note: Zucchini will cook and release liquid once it comes in contact with sauce. If you have time, put the shredded zucchini in colander, toss with 1/4 teaspoon salt, and let drain for 10 to 15. Using your hands, squeeze any excess water from zucchini.) Top with hot meat sauce and serve.
