The grocery stores are all putting their best avocados forward because they know that all you want tonight is guacamole! The best part about guacamole: its vegan! Here's a simple favorite guacamole recipes:


Guacamole


4 avocados

2 tablespoons lemon juice

1 clove garlic, crushed

1 tomato, finely chopped

1/4 cup finely chopped onion

1/4 teaspoon ground cumin

1/4 teaspoon paprika

1/4 teaspoon cayenne (optional)


Mash the avocados with a fork and add the remaining ingredients. Mix well and serve with salsa and tortilla chips. Find this and other amazing vegan recipes here.

Mango-Avocado salsa


1 avocado - peeled, pitted and diced

1 lime, juiced

1 mango - peeled, seeded and diced

1 small red onion, chopped

1 habanero pepper, seeded and chopped

salt to taste


The best salsa I've tasted manufactured in Colorado is Roberto's (made in Fort Collins!), Evan's, and the salsa from the Choke Cherry Tree in Pagosa Springs, Colorado.


Most tortilla chip brands are also vegan, but if you want some quality as well as earth-conscious food, look for these brands:
