No Bake Pecan Cookies with Peach Ice Cream

There are a lot of ways to celebrate Valentine’s Day, but I’ve always thought that something sweet should be involved. Chocolate is traditional, but there are certainly other sweets that you can enjoy.

These ice cream sandwiches by the PurelyTwins are just the ticket if you’re looking for something a little different but still yummy, and they have the added advantage of being raw and good for you. The pecan cookie is spicy and somewhat reminiscent of gingerbread, while the peach ice cream is really made with nut butter rather than milk and has a rich, smooth consistency. Together, the cookie and the ice cream are rich and flavorful. The recipe calls for macadamia nut butter, which I couldn’t find, so I used almond butter. You’ll want raw nut butter, because otherwise the ice cream will taste too nutty and not as fruity as you want.

To make these look more like a Valentine’s treat, you could cut out the cookies with heart-shaped cookie cutters, and there’s no reason you couldn’t use any fruit with them. Cherries would make the ice cream a nice Valentine’s pink.
