If you have ever watched films centering on or featuring the mafia, you might have noticed food plays a big part of the story. Let's face it, you work up an appetite "rubbing" guys out. Gun a few enemy family members down and then take a break and enjoy a nice plate of pasta!

To truly enjoy the flavors of the Godfather, once must first understand there is a difference between Italian and Sicilian food. Sicilian food is usually more earthy and simple to prepare. Most of the time, when it comes to "red sauces" for pasta, you're seeing Italian versions. Nothing wrong with these (if they're homemade) but if you want to try something really special, then spoon a Sicilian version over your pasta!

This particular Sicilian version of a red meat sauce features Italian pork sausage and the flavor is actually more sweet than acidic (Italian sauce versions are usually more acidic due to the use of a lot of tomatoes). This version also cooks up pretty fast, as opposed to the Italian versions which usually need to be simmered an hour or two.

So, grab a bottle of a hearty Sicilian red wine, tear apart some freshly made bread, make some pasta and get ready to enjoy "a meal you can't refuse!"

Ingredients needed to make Sicilian Red Meat Sauce (makes enough for 4 large plates of pasta):

  • 1/2 pound Italian sausage, casing removed and sausage meat crumbled
  • 1 leek, tender white portion only and chopped
  • 6 cloves garlic, peeled and minced
  • 1 tsp. red pepper flakes
  • 1 cup tomato sauce
  • 1/2 cup hearty red wine
  • 1/4 cup sugar


  1. In a medium sauce pan over medium heat, add the sausage and cook until it begins to brown.
  2. Add the leek, garlic and pepper flakes and cook 5 minutes.
  3. Stir in the tomato sauce and red wine and bring the sauce to a boil. Reduce the heat and simmer the sauce 30 minutes.
  4. Stir in the sugar and cook the sauce 10 minutes.
  5. Spoon the sauce over some pasta and enjoy!
