A royal flavor combination: Bite into a peanut and banana cupcake

Getting nutrition in a dessert cupcake isn’t always easy. Now there is a way to create a combo flavor blast that will delight everyone who is offered a cupcake. Banana cupcakes topped with a creamy and crunchy peanut butter frosting puts this confection over the top. Being able to invite protein and natural sugars as well as potassium into a snack treat is exciting. Usually cupcakes aren’t the way to go but these add more than just sugary cake and frosting to the table. They provide more nutrients for a healthier snack choice for all.

Ingredients:

  • ½ cup of softened butter
  • 1 cup of sugar
  • 2 large eggs
  • 1 ¼ cups of ripe, mashed bananas
  • ¼ cup of buttermilk
  • 2 ½ teaspoons of vanilla
  • 2 cups of cake flour
  • 1 ½ teaspoons of baking powder
  • ¼ teaspoon of baking soda
  • 1/8 teaspoon of salt
  • 1 cup of dry roasted peanuts, chopped

Directions:

  1. Preheat oven to 350’.
  2. Cream the butter and sugar together in a large mixing bowl until light and fluffy.
  3. Add in the eggs one at a time and beat them into the sugar mixture.
  4. Then add in the bananas, vanilla and buttermilk to another mixing bowl and mix.
  5. Then combine the baking powder, baking soda, flour and salt in a separate mixing bowl.
  6. Now combine some of the banana mixture and some of the flour mixture to the sugar mixture and mix gently until all is incorporated well and the cupcake batter is formed.
  7. Fold in the chopped dry roasted peanuts.
  8. Place cupcake liners in a muffin pan and fill with the batter two-thirds the way up.
  9. Bake in the oven for 18-22 minutes or until toothpick comes out clean.
  10. Remove cupcakes from oven and allow them to cool for 15 minutes before removing to a wire cooling rack to cool completely.
  11. Once the cupcakes are completely cooled it is time to decorate them with frosting.
  12. Enjoy!

Peanut butter frosting

Ingredients:

  • 2 cups of confectioners’ sugar
  • 1 cup of creamy peanut butter
  • ½ cup of softened butter
  • 2 ½ teaspoons of vanilla
  • 4 tablespoons of milk
  • 1 cup of dry roasted peanuts, chopped

Directions:

  1. Combine the butter, confectioners’ sugar and peanut butter together in a large mixing bowl until light and fluffy.
  2. Then beat in the vanilla extract and milk until the desired consistency is achieved for the frosting.
  3. Spread the frosting over the cooled cupcakes or pipe the frosting into a design using a pastry bag and tip.
  4. Sprinkle some chopped roasted peanuts over the frosting and serve.
  5. Enjoy!
