A Pinterest recipe find: Minny's Caramel Cake

If you've read 'The Help,' or seen the movie, you know Minny could whip up a Southern meal like no other. You may want to banish Minny's Chocolate Pie to the back burner or substitute an ingredient here or there, however. Instead, bake Minny's Caramel Cake for a delectable ending to any Southern meal.

Minny's Caramel Cake

  • 1 cup chopped pecans,extra for garnish
  • 1 cup unsalted butter, room temperature
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups unsifted cake flour
  • 1/8 tsp salt
  • 3 tsp baking powder
  • 1 1/2 cups buttermilk

Preheat oven to 350 degrees. Cream butter and sugar at medium speed until mixture is light and fluffy. Reduce speed to low, add eggs one at a time, beating well after each one. Add vanilla, mix until blended. Combine flour, baking powder, pecans, and salt in another bowl. Slowly alternate buttermilk and flour mixture to butter mixture. Begin and end with the flour. Mix until blended and smooth. Divide batter evenly among two pans that are buttered, floured, and lined with parchment paper. Bake 18-20 minutes, Remove from oven. Cool and frost.

Minny's Caramel Frosting

  • 2 1/2 cups sugar
  • 1 large egg
  • 8 tbsp melted butter
  • 3/4 cups milk
  • 1 teaspoon vanilla

Melt 1/2 cup sugar in iron skillet, slowly until brown. Mix egg, butter, sugar, and milk in saucepan, on low, until butter melts. Turn heat up. Add browned sugar. Cook until soft-ball consistency. About 10 minutes. Remove from heat, cool slightly. Add vanilla. Beat to spreadable consistency. Frost cooled cake. Garnish with pecans.
