Simple Summer Squash Noodle Salad
Noodles:
2-3 summer squash turned into noodles (use a spiralizer or a veggie peeler)
2 Tbs olive oil
2 pinches sea salt
2 pinches pepper
1-2 cloves garlic, minced
veggies:
2 tomatoes, diced
1 avocado, diced
1 cucumber, sliced
1/2 cup basil, chopped
1 tsp apple cider vinegar
1 tsp coconut nectar
pinch of sea salt
Toss noodle ingredients together in a bowl & set aside. Toss veggie ingredients together in a bowl & them mix in with the noodles. Eat up!
