A healthy punch for New Year's

Happy New Year's Eve! Well, we've made it to the end of 2013 and hopefully, you had a good year. As we reflect on the year, let's try to think about the good things of the year and how we can make next year even better! Remember to count your blessings and say your prayers for a good year to come.

Some of you will be having a party tonight, either with friends or simply with your own family. Let's make it a safe holiday, especially for those who are driving. I'm passing along the ingredients for a wholesome and healthy drink, called "Milk Punch". This is a good drink for anyone, especially children, since there's no alcohol in it. It's as good and healthy a drink as you can make, especially for growing children since it contains milk.

It's said that this punch is served in many southern homes around the Christmas holidays, so this would be a good time to have this punch, since we're about to wind up the holidays for another year. This punch is flavored with honey, cinnamon, vanilla, ginger, nutmeg, along with the milk and some vanilla ice cream. This will remind you of eggnog, though there's no eggs in it. You can then top it with some crushed peppermint candy. You'd could mix the punch up to before adding the ice cream and keep it chilled. When serving time arrives, place the prepared milk mixture in the punch bowl and add the ice cream and peppermint candies. It's now good and cold and ready to enjoy. If you wanted to, you could make this punch and place in a pitcher to serve that way, if you don't have a punchbowl.

You can use whole milk, skim milk or even fat-free milk in this punch, according to your own taste. Some folks don't like skim milk whereas some claim whole milk is too rich for them. I would suggest using the whole milk to get the best flavor and keep the servings small for the weight-watching crowd. This is a healthy, wholesome drink to welcome in the New Year!

MILK PUNCH

  • 6 tablespoons honey
  • 1-1/2 teaspoons cinnamon
  • a few grains of salt
  • 3 teaspoons vanilla extract
  • 3/4 teaspoon ginger
  • 3/4 teaspoon nutmeg
  • 6 cups milk
  • 2 cups (1 pint) vanilla ice cream
  • crushed peppermint candies

Mix honey, cinnamon, salt, vanilla, ginger, nutmeg and milk together in a punch bowl. Spoon scoops of vanilla ice cream over punch and sprinkle with crushed peppermint candy. Yield: 20-25 servings.

HINT: mix the ingredients through the milk together in advance and place in a covered container in the refrigerator. When ready to make the punch, place in the punch bowl and add the ice cream and peppermint candies.
