Pepperoni pizza is a classic. Delicious and satisfying, it is sometimes hard to look outside that box. This recipe is for a healthy alternative to that old standby. The sweetness of parsnips and nuttiness of toasted flax seeds will surprise you palette and leave you reaching for another slice.
- 1 package pizza dough mix (prepared)
- 1/2 cup chevre, goats milk cheese, crumbled
- 1 cup spanish machengo cheese, shredded
- 1/4 cup romano cheese, grated
- 1/2 tbsp Herbs de provence
- 1 cup thinly sliced parsnips
- 1/2 cup thinly sliced shallots
- 1/2 cup finely chopped spinach
- 2 tbsp flax seeds
- 1/2 cup thinly sliced honey ham cut in juliened strips (optional)
Preheat oven to 425°.
Prepare the dough as directed. Cook for 15 minutes at 400 f. Combine cheeses and herbs de provence. Spread spinach, shallots and parsnips evenly over the pre cooked pizza dough. Sprinkle cheese mixture over the vegetables. Finish with flax seeds and slices of ham. Cook for another 15 minutes at 400 f.
For a crispier crust, place a pan of water under you baking pan while precooking the crust.
