Looking for a healthy alternative to the usual fat-laden party dips? Look no further. This roasted garlic white bean dip gets its creaminess from cannellini beans which are low in fat and high in protein and fiber, a drastic change from the dairy products typically found in party dips. In fact, the most fat you'll find in this recipe comes from olive oil, which is actually considered a healthy fat in moderation. Antioxidant-rich rosemary gives it an earthy flavor, while lemon zest gives it a fresh zingy undertone.
Perfect for your more health-conscious guests (or those who just like good food), this dip is a great addition to your party spread. Serve with pita or bagel chips and assorted vegetables, and enjoy without the usual party food guilt.
Make ahead of time or keep your leftover dip (if there is any) refrigerated in an air-tight container. It will keep for up to a week and is also tasty spread on sandwiches.
Ingredients:
- 1 15.5-oz can cannellini beans, drained and rinsed
- 1 clove garlic, peeled and finely chopped
- 2 tablespoons good-quality extra virgin olive oil
- 2 teaspoons finely minced fresh rosemary
- 1 grated lemon peel (zest only)
- Salt and pepper to taste (1/4 teaspoon each recommended)
Place beans in a food processor. In a small saucepan, heat 1 tablespoon of olive oil and a clove of garlic on medium heat until the oil starts to crackle and the garlic is fragrant and just on the verge of browning. Remove from heat and pour over the beans. Add 1 teaspoon of rosemary. Pulse until the beans are pureed, stopping to scrape and stir if necessary. In the same saucepan, heat the remaining tablespoon of olive oil and teaspoon of rosemary until fragrant. Stir into bean mixture along with lemon zest. Add salt and pepper to taste. Stir and serve.
