No matter how much we plan ahead, we somehow wind up just before the holiday needing a last-minute gift.
One easy way to solve this dilemma is to put together a foodie gift from your own kitchen – it’s personal, and best of all, it can be assembled without much fuss and bother with items you have on hand, or ingredients you can find easily at your local super market.
One family favorite is called “3-2-1” cake. Don’t be surprised if this one will be in demand for annual gift giving. All you have to do is combine a regular box of angel cake mix with a similar-size box of a favorite cake filling, such as chocolate, lemon, strawberry – well you get the idea—the possibilities are many. To prepare the cake, put 3 tablespoons of the combined cake mixes in a mug—no need to grease or spray it beforehand. Mix in 2 tablespoons of water right from the tap, and then nuke it for 1 minute. Voila! You have a single-size portion of a delicious fluffy cake, that can be eaten right out of the mug (after cooling slightly), topped with ice cream, whipped cream, or topping.
To make this into a gift, fill a mason jar or other container with the combined cake mixes. Add a gift tag and directions for making the cake. Top with a pretty bow or seasonal decoration.

1 box angel food cake mix
1 box any flavor regular cake mix
Mix the 2 cake mixes together in a gallon zip-lock bag, or other convenient container.
To make the cake, place 3 tablespoons cake mix in a mug or other small microwave-safe container. Mix with 2 tablespoons water. Microwave on High for 1 minute. Let mixture rest a few minutes to cool off, then serve with a favorite topping, such as fruit, ice cream, or whipped cream.
For Gift Giving: Mix together the angel food and other regular cake mix. Place this mixture in a gift container. Label with directions and a gift tag.
