A February treat: Yummy Cherry Cupcakes

Everything's coming up cherries in February. Chocolate covered cherries, cherry pies, cherry milkshakes; a cherry on top of anything sweet makes it that much sweeter and yummier. Perhaps the most yummiest of all is the ever popular Cherry Cupcake. The cupcake with a cherry on top is a delicious February treat.

February will be here and gone.So grab your cupcake making essentials and bake a batch of Cherry Cupcakes soon. The sweet, prelude to Spring, month of February is not complete unless there's a cupcake with a cherry on top.

Cherry Cupcakes

  • 1 box of chocolate cake mix
  • 3 eggs
  • 1 1/3 cups water
  • 1/2 cup vegetable oil
  • 1 (21 ounce) can cherry pie filling
  • 1 (16 ounce) can vanilla frosting

Prepare cake mix according to directions,using eggs, water and oil. Spoon batter into 24 paper-lined muffin-pan cups. Fill two-thirds full.

Remove 24 cherries from cherry filling; set aside. Spoon generous teaspoon of remaining cherry filling onto center of each cupcake.

Bake in preheated 350 degree oven for 20-25 minutes. Cool in pans on wire racks for 10 minutes. Remove from pans. Let cool completely. Frost cupcakes with frosting. Garnish cupcakes with reserved cherries.
