This sweet yet tart cookie seems to be everyones favorite. Easy to make adds to its appeal.

Lemon coconut cookies

1/2 cup butter, softened

1/2 cup sugar

1 egg yolk

2 tsp grated lemon zest

2 tsp grated orange zest

1 cup flour

1/4 tsp salt

1/2 cup raisins

1 egg white, lightly beaten and chilled

1 cup flaked coconut

  • Preheat oven 325 F.
  • Cream butter and sugar.
  • Add egg yolk and zests.
  • Mix well.
  • Beat in flour and salt.
  • Stir in raisins.
  • Shape into small balls.
  • Roll small balls in egg white then in coconut.
  • Bake 20 minutes until the cookies are lightly browned.
  • Coll on wire cooling racks.
