Valentine’s is all about chocolate. Whether its chocolate candy, chocolate cake, chocolate cupcakes or chocolate cookies, when you add a shiny and delicious layer of chocolate frosting on any of these confections, you’re in for a double treat.
This recipe is quick and takes no longer than 10 minutes to make. The extra time involved is waiting for it to come to room temperature, so factor in an additional two to three hours. For the best results do not frost any pastry before this process. Additionally, the recipe calls for heavy whipping cream. It is best not to deviate from the recipe or the icing will not set up properly. This recipe will cover two dozen cupcakes, a 9X13 cake or two 8 inch round cakes.
Shiny Chocolate Icing
- 8 t butter
- 1 ½ C sugar
- 1 ¼ c unsweetened cocoa powder
- Pinch of salt
- 1 ¼ C heavy whipping cream
- ¼ C sour cream
- 1 t instant coffee granules
- 2 t vanilla extract
- Melt butter in large sauce pan over medium heat.
- Stir in sugar, cocoa and salt. Mixture will be thick.
- In a container (mixing cup is good), combine the heavy cream, sour cream and coffee.
- Mix until smooth.
- Gradually add mixture to chocolate and mix until smooth. (6 to 8 minutes)
- Do not boil
- Take off the stove and mix in vanilla
