From time to time, you will see a recipe and discussion about a crazy themed dinner event in SLC that some of my girlfriends and I host. This edition is brought to you by crockpots and ugly Christmas sweaters.
The rules: all food and drink should be made and/or served in the crockpot. Tiffany (@foodfinery) made a wonderful entrée of beef stroganoff. You can find her recipe and some pictures of our sweaters on her blog. Becky hosted and served the appetizer and crockpot dessert. Aimee won for best ugly Christmas sweater featuring pandas. I was in charge of the cocktail for the evening. As it is a festive time of the year, I went with Hot Buttered Rum which was kept warm in the crockpot. While you can make hot buttered rum glass by glass, I decided to make a larger batch of the hot buttered rum mix and then keep any of the leftover for a warm cocktail throughout the season. This recipe features local Neighborhood Beekeeping honey out of Highland, Utah.
Makes 25 servings
- 3 cups brown sugar
- 1/2 cup unsalted butter
- 3 Tbsp. honey
- 1 Tbsp. vanilla extract
- tsp. ground nutmeg
- tsp. ground allspice
- 1 tsp. ground cinnamon
Mix the ingredients using a beater until everything is blended together. Store in a well-sealed Tupperware container in the refrigerator until needed.
To make a drink, pour 1 1/2 ounces of spiced rum into an Irish coffee glass or mug. Add a heaping spoonful of the hot buttered rum mix. Fill with hot water (not boiling). Stir well. Garnish with cinnamon stick for stirring.
