It's that time of year when fields of corn are in bloom and farmer's can't get them sold fast enough. Nothing says summertime like corn on the cob.
Corn is a refreshing, filling, and above all delicious starchy vegetable that is adored by all, whether young or old, it's a universal delight.
Corn can be cooked in a variety of ways, but nothing beats a classic grilled corn on the cob. Different seasonings and sauces can be added to any corn for unbelievable flavors.
Here is a simple and easy corn on the cob recipe that will send your taste buds on a flavorful roller coaster of delight, not to sound too corny!
Grilled Corn with Herb Butter
2 Tbsp. finely chopped fresh tender herbs (such as cilantro, chives, and/or flat-leaf parsley)
1 1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
8 ears corn, shucked
1 Tbsp. vegetable oil
1/2 cup (1 stick) unsalted butter, room temperature
Prepare grill for medium-high heat. Mix butter, herbs, salt, pepper, and a pinch of cayenne pepper in a small bowl. Set herb butter aside.
Brush corn with oil and grill, turning often, until it is tender and charred in spots, 5–8 minutes.
Transfer corn to a large platter or bowl and spread with reserved herb butter, dividing evenly.
DO AHEAD: Herb butter can be made one day ahead. This ensures the most flavorful herb butter and allows the flavors to marinate. Cover and chill. Bring to room temperature before spreading over grilled ears of corn.
SIDE NOTE: The herb butter can also be used for a variety of recipes not just corn on the cob. Added to biscuits and bread is one option; pastas, rice dishes and other veggies prepared with this herb butter can heighten any flavor. Get creative and have fun with your food!
