A Champagne Cocktail and Sparkling Recommendations

You like the Mimosa, made with Champagne or sparkling wine and orange juice, but here's a little twist on the theme:

1. Pour sparkling wine into a Champagne flute halfway (or just a smidgen more)
2. Add Pineapple Juice until about 7/8 full
3. Add just a dribble of Blue Curacao down the inside of the glass

Sometimes this is called a Blue Lagoon and similar to a Disco Fizz, but it's always called phenomenal.  And, please, don't use the expensive stuff to make a cocktail such as this.  Korbel and Moet Chandon are good options.  Also note that Champagne is sparkling wine made in the Champagne region of France, otherwise it is known as sparkling wine everywhere else.
