It’s another late night at the office and you’re running around doing a million and one things at once, being stuck on the 405 also isn’t helping. Before you know it, hunger slams you from behind and your caught dialing for take-out. You come home starving, unable to think clearly, let alone cook yourself dinner (microwavable hot pockets doesn’t count). This situation is more familiar than not, but fortunately for you, this super simple, yet elegant recipe will satisfy your belly in no time. So forget the late night take-out, and whip up this sweet and tangy grilled salmon. Serve alongside some instant brown rice and steamed vegetables and you have yourself one tasty meal!
Honey-Soy Grilled Salmon Recipe
Serves 2
- 1/2 pound center-cut salmon fillet, skinned and cut into 2 portions
- 1 tablespoons reduced-sodium soy sauce
- 1.5 tablespoon rice vinegar
- 1.5 tablespoon honey
- 1 scallion, minced
- 1/2 tablespoon toasted sesame seeds (optional)
Directions
1. Whisk scallion, soy sauce, vinegar, and honey in a medium bowl until the honey is dissolved.
2. Preheat grill with cooking spray
3. Transfer the salmon to the grill, skinned-side down. Grill until cooked through, 6 to 10 minutes, basting the salmon every couple of minutes with the glaze. Drizzle with the reserved sauce and garnish with sesame seeds.
