Weeknights call for simple, quick dishes that can be thrown together as soon as soccer practice is over. Try one of these four delicious pasta entrees on your next busy weeknight.
Garlic soba and zucchini noodles. Part soba noodles, part zucchini-sliced-in-noodles, this dish is nicely simple and quick to come together.
One-pot summer garden pasta. There isn’t an exact recipe for this pasta. Just lots of fresh summer vegetables and some pasta, tossed with some olive oil, Parmesan and chopped basil. It doesn’t get much better than this.
Sausage and goat cheese rigatoni. This dish feels much fancier than the easy preparation would lead you to believe. Caramelized peppers and onions accent this bowl of rigatoni, goat cheese and sausage.
Simple Asian soy-peanut noodles. Any thin, long noodle that you have in your pantry will work well for this pasta. A sweet and salty peanut sauce coats the noodles, which are garnished with scallions, cilantro, peanuts and sesame seeds.
