With the school year just beginning, there is a lot of adjusting to be done: you’re shifting to new schedules, to new pick-up and drop-off times, to after school activities. Some evenings, a quick and easy meal is necessary. Rather than opting for takeout, try one of these super-simple dinners on your next busy evenings.
Farro pesto salad. If you don’t have any farro, try using quinoa, barley or brown rice in its place. You may need to adjust the amount of water you use accordingly – just simmer until the grain is tender. Since garlic scapes are now out of season, a basil pesto would work just as well here, too.
Grilled sourdough with buttery herbs, heirloom tomatoes + a honey drizzle. It really doesn’t get much simpler than this. The only real cooking involved is grilling the bread, and let’s face it, anyone can make a piece of toast!
Midnight pasta with pecorino and olio santo. Make the infused oil up to a few weeks in advance, or make it while waiting for the pasta water to come to a boil. Either way, this recipe should take you no longer than the time it takes to cook a batch of pasta.
