It never hurts to keep cooked, shredded chicken in the refrigerator. This can be as easy as picking up a rotisserie chicken at the grocery store and shredding it once cool. For those who want to take the time, a home-cooked whole chicken is even better. Plus, the carcass can always be used for home-made chicken stock.

Either way, keeping ready-to-go chicken handy makes for some really easy meals. With chicken in the fridge, you can make these delicious, cafe-style lunches in less than ten minutes!

1. Chicken Salad

•1 cup cooked, shredded chicken

•1 tbsp walnuts

•A few grapes or 1/4 apple

•1 tbsp mayonaise

•1 tsp. white vinegar

•Fresh parsley or dill

•Salt & pepper

Mix the first five ingredients together in the bowl. Season with parsley or dill, salt, and pepper to taste. Serve on toasted wheat bread to keep it healthy!

2. BBQ Chicken Melt

•1/2 green bell pepper

•1 tbsb butter or olive oil

•1 cup cooked, shredded chicken

•2 slices pepperjack cheese

•4 tbsp barbeque sauce (Spicy-sweet recommended)

•4 slices hearty bread

Preheat oven to a high broil. Saute green pepper until soft, just a few minutes. Pile chicken on two slices of bread, top with peppers and cheese. Place the sandwich "bottoms" on a cookie sheet and broil until cheese is melty. You can toss the extra slices of bread--the "top" piece--in at the last minute to toast them up, as well. Remove from oven, smother with BBQ sauce, and top with the other piece of bread.

3. Pesto Chicken Pita

•1 cup cooked, shredded chicken

•2-4 tbsp store-bought pesto

•Dried cranberries

•2 pita pockets

Combine chicken, pesto, and cranberries in a bowl. Spoon into pita pockets and serve. Note: Wheat pita pockets make for a healthy and satisfying subsitution.
