During the holidays, it’s great to have some easy no-bake cookies on hand just on case guests stop by. Gayle and Keith Hubbard know all about entertaining guests on a regular basis. As the owners of Ridgeway House Bed and Breakfast in Eureka Springs, the Hubbards will make you feel night at home.
This was one of the cookies that they served at the seventh annual Sweet Treats Cookie Tour that was held on Saturday, December 14. As part of this self-guided walking tour, guests could casually stroll through nine participating inns, meet the innkeepers, taste some goodies and get inspiration for holiday decorating.

Ridgeway House Holiday Haystacks
- 2 packages butterscotch chips
- 1/2 nuts of your choice
- 2 heaping tablespoons peanut butter
- 2 (12 oz.) packages shoestring potatoes
Mix together the butterscotch chips, peanut butter and then melt over low heat until smooth. Add nuts and shoestring potatoes. Drop tablespoon portions on wax paper until cool.
