25 Days of Cookies: Lots of love goes into this special cookie recipe

The next cookie recipe comes from Julie Byers, the daytime Front of the House manager/instructor at Foundations, the restaurant inside the Culinary Institute of Platt College.

Julie writes, “I think my grandmother in heaven was guiding my hands today as I made every addition into the mixer bowl because I think this was the best batch I have ever made of these. She made these for as long as I can remember and they are my mom’s and my favorite. They are aptly named Delicious Cookies. Here's the recipe.

Delicious Cookies

  • 1 c. butter or margarine (I used one stick of each)
  • 1 c. sugar
  • 1 c. brown sugar
  • 1 c. oil
  • 1 egg
  • 3 1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cream of tartar
  • 1 tsp. vanilla

Then add:

  • 1 c. Rice Krispies
  • 1 c. coconut
  • 1 c. oatmeal
  • 1/2 c. chopped pecans

Drop onto cookie sheets then press with a fork. Bake at 350 for 10-15 min. until light brown.
