If you love a slice of cranberry orange bread in the morning for breakfast, you’ll love these cookies anytime.
Another take on a basic drop cookie, these little flavorful bites are bursting with orange flavor and two types of cranberries.
Set out a wide selection of cookies for Christmas Eve snacking.
Cranberry Orange Cookies
Makes about 4 dozen cookies
- 2 ½ cups flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 stick butter, softened
- ½ cup shortening
- 1 cup sugar
- ½ cup brown sugar
- 1 teaspoon finely grated orange zest
- 2 tablespoons orange juice
- 1 ½ teaspoons vanilla
- 1 egg
- 2 cups coarsely chopped fresh cranberries
- ¼ cup chopped nuts
- ¼ cup dried cranberries
Preheat oven to 375. Line a couple of cookie sheets with parchment paper.
In a small bowl, sift together the flour, baking soda and salt; set aside.
In a mixer bowl, cream together the butter, shortening and sugars until light and fluffy. Add orange zest, juice and vanilla; beat in egg just until it is incorporated.
Add the flour mixture, just until it is incorporated.
Stir in the fresh cranberries, nuts and dried cranberries.
Drop dough by tablespoons about 2 inches apart on prepared pans.
Bake for 12-15 minutes or until lightly browned
Cool completely on a wire rack.
Frost with orange frosting.
1 ½ cups powdered sugar
½ teaspoon finely grated orange zest
3-4 tablespoons orange juice.
Using a hand mixer or a whisk, combine all ingredients.
Drizzle over cooled cookies.
