25 days of cookies: Belgian Christmas cookies

Christmas is in two days. Have you baked your cookies yet?

Once the shopping and wrapping is all done, pour a glass of wine, kick back and enjoy some time in the kitchen baking some truly delectable goodies. Your family, friends and Santa will thank you.

Here’s an oldie but goodie from Danny in Tulsa. He says that he always enjoyed these cookies. Make them a new tradition in your house this year,

Belgian Christmas Cookies
Yields about 5 dozen

  • 2/3 cup butter
  • 1 tsp. almond extract
  • 1 cup firmly packed dark brown sugar
  • 2 eggs
  • 1 2/3 cups flour
  • 1&1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup finely chopped almonds
  • 1/2 tsp. ground cinnamon
  • Garnish with red n green sugar


Preheat oven to 375. Grease a 15x10x1 inch jelly roll pan.

Cream butter with extract and brown sugar until fluffy. Add eggs one at a time.

Sift flour, baking powder, and salt together. Add in thirds to creamed butter mixture. Scrape sides of bowl after each addition. Spread dough evenly to edges.

Sprinkle mix with almonds and cinnamon over batter, then sprinkle with mix of red n green sugar.

Bake for 10-12 minutes depending on oven.

Cut into squares and serve after cooled.
