Pesto and cheese stuffed chicken breasts are so simple to make, they will become a weekly staple. This is an elegant dish to make for a dinner party with so many different ways to serve it. Serve the chicken alongside a mixed greens salad or slice the chicken on top of a bowl of whole wheat pasta. Heat up the leftovers for a tasty sandwich anytime of the day. Pounding out the chicken makes holding the cheesy stuffing easy. Browning the chicken in a skillet before baking gives it a beautiful golden crisp color. Make this decadent dish in no time!

Ingredients
Serves 4
- 4 boneless, skinless chicken breasts, (1-1 1/4 pounds total)
- 1/4 cup homemade or store bought pesto sauce
- 1/4 cup feta cheese
- 2 tablespoons olive oil
- Salt and pepper
Directions
1. Preheat oven to 400°F. Lightly coat a baking sheet with sides with cooking spray.
2. Using a meat tenderizer, pound out chicken breasts until thin. Salt and pepper one side of the chicken. Spread 1 tablespoon of the pesto and feta on each chicken breast and roll up.Repeat with remaining chicken breasts and filling.
3. Heat oil over in a large nonstick skillet medium-high heat. Add chicken seam side down and cook until browned on one side, about 2 minutes. Transfer chicken to the prepared baking sheet, browned-side up, and bake until it is no longer pink in the center, about 10 minutes.
4. Serve with a mixed greens salad.
