Local authors Julie and Charles Mayfield just released their new cookbook, "Quick & Easy Paleo Comfort Foods: 100+ Delicious Gluten-Free Recipes," and it is full of recipes that can be prepared in under 30 minutes. I was fortunate enough to attend their book release party at Local Three Kitchen & Bar where they prepared some of the recipes from the cookbook for sampling.
According to Julie and Charles, people are showing marked health improvement by following the Paleo diet, which eliminates gluten, dairy, legumes, and gluten-containing grains while encouraging people to eat whole foods. The Paleo diet, or really the Paleo movement, has helped shine a positive light on those of us who follow a gluten-free diet for its medical benefits and not for the fad diet aspects that has been heavily hyped by the media.
At the book release party, I sampled the: Curried Deviled Eggs, Ras El Hanout Chicken Wings, and the Roasted Butternut Squash Dip with crispy veggies. It is rare that I attend an event where all of the food is gluten-free, so it was delightful to nosh with everyone. The deviled eggs were tasty, as was the dip, but the winner of the evening was the chicken wing. The wings were crispy on the outside, moist and flavorful on the inside and undetectable as gluten free. I washed all of the food down with an Angry Orchard cider and felt incredibly included and full.
The cookbook contains tips and recipes that help readers learn the basics of quick cooking and easy meal assembly.
